Blueberry Banana Muffins

Since I am going out of town tomorrow to watch the Twilight Eclipse movie with my Tucson girls I thought I would post the recipe for our Wednesday dinner tonight. For future reference I will post recipe's for the following day, the night before....

Blueberry Banana Muffins

2 overripe bananas
1 egg
3 T. butter
1 c. sugar
2 c. flour
2 t. baking powder
3/4 c. milk
2 c. blueberries

Preheat oven to 375. Beat bananas, egg, butter, and sugar. In separate bowl combine flour and baking powder. Add alternately Flour mixture and Milk, beating until well blended. Fold in blueberries. Spoon batter into greased muffin tin(s) and bake for 25-30 min.

Serve with scrambled eggs, topped with cheese, and bacon. If you have extra fruit laying around serve that with your meal too!

*For healthier option... use half whole wheat flour and half white flour. Can also use half splenda, half sugar. You can use fresh or frozen blueberries for this recipe. I like buying blueberries in large quantities when they are super cheap during the summer and freezing them in large quart or gallon freezer bags.

Fajita's

For the fajita's you will need

Chicken
bell peppers (2 colors)
onion
Fajita seasoning
tortillas
sour cream
cheddar cheese
tomato
avacado
refried beans
You can also use lime

To make the fajita meat mixture:

slice the bell peppers and onions into thin strips
Warm a frying pan and spray with spray oil
Add onions and bell peppers
Start slicing chicken (don't forget to stir the peppers and onions while slicing chicken)
Add Chicken and fajita Seasoning mix and stir
Let cook, stirring occasionally till meat is cooked through and veggies are tender

While meat is cooking warm beans on stove set to medium setting in a small pot with a little added water to get a better spreading consistency. Don't forget to stir the beans!

While beans and chicken is cooking chop other veggies, set on plate, cover and warm tortillas in microwave, and set table with other ingredients.

Once it is all done cooking top tortilla's and enjoy!

Teriyaki sauce and marinade (seperate bottles, one thick one more liquid)
Frozen or fresh tilapia
rice (go for brown!)
Pineapple
Facocia or ciabata bread
Spaghetti Sauce
Mozzerela Cheese
Basil
Italian style bread crumbs
Parmesan cheese
Lettace
French Fries
Whipping cream
Half and half

Disclamer: This shopping list is only a list of items needed for dinner it does not take into account other items for other meals that might be needed. It also does not take into account simple ingredients that you should have on stock like flour, milk, sugar, oil, butter, baking powder, etc.


My Idea

It seems to me that all of us women (and many men) are frequently faced with the question... "What's for dinner???"

I have decided as of late that I am going to tackle this inevitable question with a blog! Rosies Dinners.

Here is how it is going to work....

Every Sunday is meal planning day. I will post the meals for the coming week along with a shopping list.

Monday is shopping day everyone! Take the list, figure out what you need and already have, shop for those items you don't have, then you will be set for the week. (If you are a weekend shopper then you will be able to start the shopping list at the end of the week instead of the beginning. Sorry that leaves you out of the loop for the first week.)

Then each day I will try to post the full recipe along with any pictures I manage to take.

Hopefully this should make all our lives easier as we try to plan our meals, eat healthier, and enjoy less stress!
