Tilapia or other white fish (fresh or thawed in milk)
oil for frying
1 c flour
1/2 t salt
1/2 t sugar
1 egg
2 T oil
1 c ice water
1/2 t baking powder
Heat 1 1/2- 2 in deep oil in frying pan on high. Mix all ingredients, except for fish and frying oil, in medium sized bowl until smooth. Pat fish dry with paper towel, then dip in batter. Fry for 4-5 min per side or until golden brown. Let cool on paper towels. Serve with lemon wedges, malt vinegar, and french fries.
